Menu Plan Monday

I have a wonderful method for menu planning, one recommended by my good friend, Beth, that I’ve used quite successfully in the past.  For whatever reason, however, I have once again fallen away from using it, and our meals have suffered as a result of my lack of forethought.  Since going gluten free/casein free several months back, many of my old standbys have turned into no-nos, and a kid can only fill up on chicken, green beans, and apple slices so many evenings… so, it’s back to menu planning I go.  
I am going to try planning one week at a time to start.  For while planning and shopping for two weeks at a time is easier and more time efficient, planning and shopping for one week at a time has proven to be more cost effective, particularly through our CSA days, as we receive an unexpected assortment of fruits and veggies each week throughout the Spring, Summer, and Fall.

This week we’ll be packing our tent and heading to our first Cub Scout Family Camp of the new Scout year, so Friday and Saturday’s menus will be cooked at the campsite.

Monday, September 27
Yogurt and fruit for Connor, apples and peanut butter for Ryan
Chicken, carrot sticks, cucumber slices, fruit
Golden Glow Pork Chops and steamed peas

Tuesday, September 28
Yogurt and fruit for Connor, apples and peanut butter for Ryan
Leftover golden glow pork chops, peaches, peas
Stir fried veggies and fried rice 

Wednesday, September 29
Gf/cf English muffins with homemade apple butter
Peanut butter and jelly on homemade gf/cf bread, applesauce
Baked Tilapia with sauteed potatoes, zucchini, and squash

Thursday, September 30
Cinnamon muffin and fruit with yogurt
Ham and turkey roll-ups, applesauce, tortilla chips… lunch box fare at co-op
Minestrone Soup (in the crock pot), gf/cf drop-biscuits

Friday, October 1 (Connor’s birthday and Cub Scout Camping Trip)
Gf/cf English muffins with homemade apple butter
Hotdogs (gf/cf), carrot sticks, cucumber slices, apple slices
Popcorn chicken , french fries, salad, and birthday rice krispie treats!

Roasted marshmallows!

Saturday, October 2 (Cub Scout Camping Trip)
Eggs, bacon, toast, and fruit (yogurt and fruit for Connor)
Ham and turkey roll-ups, tortilla chips, fruit
Rice penne and meatballs, salad, garlic bread (gf/cf, of course)

S’mores on gf/cf graham crackers!

Sunday, October 3 (Still camping with the Cub Scouts)
Cinnamon muffins and fruit (yogurt for Connor)
Ham and turkey roll-ups, carrot sticks and cucumber slices, applesauce – (figured out the boys’ favorite lunch yet?)
Pancakes and fruit smoothies (we’ll be running – no pun intended – from camping, to a cross country meet, to AWANA:  a quick dinner is definitely in order!)
