My Favorite Things: Soups On!

January in Virginia typically brings temperatures below freezing and occasionally a few flurries… and this January is proving to be no exception.  In fact, it’s starting out with record cold temperatures and winds that blow right through to your bones; and as I blow in the door from outside, I  find myself craving soup:  familiar favorites and enticing new bowls of warm comfort.
This time last year, in the midst of January’s long, cold, dreary winter days, I had the privilege of testing soup recipes for a dear friend who was writing her own soup cookbook.  Each night for weeks, the house smelled wonderful as the soups bubbled on the stove, and Patrick’s question of “What’s for dinner?” was met with a consistent reply, “Soup!”  We sampled bisques, chilis, cream-soups, chunky soups, pureed soups…. and we discovered not just a few new favorites among them…

Now, I’m told there are still a couple of layout issues to be resolved, but the recipes are finished and THEY ARE GOOD!  My favorites are St. Shannon’s Soup (made with thin egg noodles instead of pasta), Butternut Bisque, and the super-simple-to-make Not-so-traditional Onion Soup, but they’re all good, so be sure to give them a try one cold winter day.
